Our tour through the canton of Vaud took us to the pretty village of Baulmes, nestled at the foot of the Jura Mountains. It is a place we probably would never have the opportunity to visit unless we were out hunting for cheese!
Bernard Claessens comes from a painting company, he left everything in 2018 having the opportunity to take over the Fromagerie Conod in Baulmes. Promoting local products, artisanal know-how, and developing the distribution of his products seduced him and he launched himself! Assisted by a master cheesemaker, he has the ambition to make this company live, to maintain the jobs, to modernize it, and to lead reasonable growth. The Fromagerie Conod collects the surplus milk from the surrounding dairies in order to produce mainly Vacherin Mont d’Or AOP. These Mont d’Or are sold locally, but also exported in France and across the Atlantic! During the high season, 15 employees work hard to make this precious cheese.
