Spring is shaping up to be wonderful, let’s make the most of it!

We continue our tour of Switzerland now that we have made a first tour of the cantons. Some were not highlighted, such as Geneva, Schaffhausen or the Jura, but unfortunately, there were not enough cheese dairies for our selections. We promise we will highlight these regions thanks to their wines.

The canton of Aargau is therefore in the spotlight in April, a rather flat canton but with fertile valleys fed by the Aare and its tributaries, perfect for dairy farming – and cheesemaking!

Wollknäuel

Käserei Berglinde, AG

Wollknäuel is a delightful, super-creamy, soft cheese with a flowery rind made with fresh sheep milk.  After leaving it to rest at room temperature for at least 30 minutes, the center melts and envelops your mouth with a velvety creaminess.  This artisanal cheese has a balanced acidity like a fine Greek yogurt.  The crust gives an earthiness that is mild and complements the textures of this exquisite cheese.

Soft cheese with a white flowery crust, aged 4 weeks

Serving suggestion :

Pairs beautifully with a Sauvignon Blanc with tropical notes

Kräuterkäse

Käserei Berglinde

Kräuterkäseis a house specialty of Käserei Berglinde.  It is a young, soft cheese delicately coated with herbs.  Perfect for spreading onto a crusty baguette!  The herbs and the hint of garlic are an enchanting accompaniment to the tangy, creamy texture of this artisanal cheese. It is sure to be enjoyed by everyone!

Delicious spread over a crusty baguette and served with a light white wine

Heugümper Bio

Brülisauer Käse

Heugümper Bio is a semi-hard cheese made with organic milk from the region.  The name translates to grasshopper in the local Swiss German dialect, in reference to this characteristic hay insect.  Its delicate aroma and mild flavor allow for the subtle flavors of grass and hay to come through.  The cheese finishes with a very slight nuttiness that lingers on your palate.

Semi-hard cheese made with Bio milk, aged 3 to 5 months

Serving suggestion :

Beautiful as a breakfast cheese, melted on a panini sandwich, or enjoyed with a light white wine.

Künter Spezial

Brülisauer Käse

Künter Spezial is a semi-hard artisanal specialty with a soft texture.  It is a mild cheese that tastes like fresh butter!  Its creamy, white dough is a striking contrast to its black crust which has been rubbed with charcoal to achieve its visual effect.

Semi-hard cheese with a crust rubbed with charcoal, aged 6 to 8 weeks

Serving suggestion :

Stunning on a cheese board, but it can also be melted over gratin dishes.
