Introduction

Our October Box is full of delicious surprises!  Discover house-made specialties made with mountain milk from the lush, green meadows of canton Bern.  Our selections include artisanal cheeses infused with garden herbs, specialties that evoke umami flavors of mushroom risotto, and cheeses that amplify the dairy notes of butter, cream, and nuts.

And let’s not forget the wine! Solaris is like drinking sunshine in a glass!

Chrüter Joggeli is a full-flavored semi-hard cheese with a soft, tender texture.

Made with fresh whole milk infused with garden herbs and fresh celery, which gives its unique taste that is both oniony and herby.  Perfect to enjoy at lunchtime or at an apéro!

Characteristics :  A semi-hard cheese aged 5 months and infused with garden herbs

Type of milk :  Cow

Process :  Thermized

Serving suggestion :  Delicious on a sandwich!  Also, perfect to present this herby specialty on a cheese board.

Chlöisu Chäs

Chlöisu Chäs

Chlöisu Chäs is made with the addition of Sumiswald cream, which gives a tender and soft texture and a very creamy taste.  It has round complex flavors that give hints of umami – like a savory, mushroom risotto. Close your eyes and savor the moment!

Characteristics :  A semi-hard cheese aged 3- 4 months made with Sumiswald cream

Serving suggestion :  Enjoy this cheese on its own to discover the hidden umami flavors.

Délice de Schönried

Délice de Schönried

Délice de Schönried is a soft, ultra-creamy cheese with a milky-sweet taste.  There are hints of garden herb flavors and sweet hay. Perfect for ending a meal with this creamy dessert cheese.

This artisanal cheese can also be baked like a Vacherin Mont d’Or (eg. wrapped in aluminum foil with garlic cloves pushed into the top, drizzled with white wine, and then baked).  No worries, we can send you the recipe!

Characteristics :  A soft cheese aged 4-6 weeks

Serving suggestion :  Pair this delicious dessert cheese with a glass of Port wine or an aromatic, white wine such as Solaris. This cheese can also be prepared in the oven like a Vacherin Mont d’Or.  (Contact us if you need a recipe 😉

Schönrieder Bergkäse Rezent is a hard, mountain cheese that has a round taste of butter and a hint of nuts.  The fresh milk comes straight from the mountain pastures of Saanenland where the cows graze in the lush meadows and untouched landscape.

Characteristics :  A hard cheese aged 12 – 18 months

Type of milk :  Cow

Process :  Thermized

Serving suggestion :  Pair with a buttery, oaky Chardonnay to enhance the buttery and nuttiness of this specialty.  Red wine may mask its delicate dairy flavors.

Charme de Möser

Charme de Möser

Charme de Möser is a soft cheese with a bloomy rind made with fresh cow’s milk from the neighboring pastures. You can taste the hay in this cheese which reminds you of where the precious milk comes from – grass-fed cows. It has a creamy taste and texture which is balanced by a light tanginess. This cheese maintains its firm texture even as it comes to temperature for savoring. Perfect for a cheese board as it does not lose its shape.

Characteristics :  A soft, bloomy white rind cheese with a delicate taste of hay, aged minimum 14 days

Type of milk :  Cow

Process :  Thermized

Serving suggestion :  Perfect for a cheese board as it maintains a firm texture and does not melt onto the board. Top on an olive oil crostini and drizzle with a spicy, fruit jam!

Twanner Solaris Bielersee AOC

Twanner Solaris Bielersee AOC

Solaris with its straw-yellow color and bright, aromatic intensity, gives flavors of passion fruit, pineapple and papaya. It has high acidity, with tropical fruit and honey flavors. It is perceived as sweet because of its residual sugar. It is a wine of medium-long persistence.

Grapes : Solaris

Origin :  Three Lakes Region, Canton Bern

Wine Style :  Intense floral and fruity, semi-dry white wine

Vintage :  2020

Characteristics :  High aromatic intensity, aromas of passion fruit, pineapple, and papaya, and high acidity.

Serving suggestion :  The floral and fruity notes of a Solaris wine are delightful when paired with a soft, bloomy rind cheese. The slight earthiness of the white rind balances the fruit-forward aspect of the wine which enhances the tasting experience.
